Babcia's Carnival Cake

Babcia had always made this cake for family gatherings. Whether it was Christmas, Easter, or a birthday, she would always decorate the cake to make it special for that event. Her special cake still lives on in our family gatherings.


Cake

  • 2 cups sifted flour
  • 1 1/2 cups sugar

  • 2 1/2 tsp baking powder

  • 1 tsp salt

  • 3/4 cup shortening (butter or margarine)

  • 3/4 cup milk

  • 1/2 tsp vanilla

  • 1/2 tsp almond

  • 3 eggs

  1. In separate bowl, sift flour, baking soda, and salt, then set aside.

  2. Combine milk and extracts, hand beat eggs, and add to milk mixture.

  3. Beat sugar and shortening until well blended.

  4. Alternate flour and milk mixture, blending well between each addition.

  5. Spray cake pan, then bake at 375ยฐ F for about 30 minutes or until cake tester comes out clean. Do not over bake.

  6. Cool. When cake is cooled down, slice in half to get two layers. Frost with traditional cream cheese frosting.

FROSTING:

  • 1/2 cup butter, softened                       

  • 8 oz cream cheese                               

  • 4 cups powdered sugar

  • 2 tsp vanilla (I substitute almond extract)

  1. Beat together until creamy.
