Parsley Carrot Salad

My food tends to be bright, simple, and fresh. I feel it's important to have recipes be approachable. Parsley is one of my favorite ingredients, and this salad helps introduce people to it who may know it only as a garnish. This is a great side dish to add to a weeknight dinner. It can come together in no time and will bring vitality to any meal. 


  • 2 carrots, grated
  • 1 head of parsley, finely chopped

  • 1/2 head of celery root, cubed and roasted (optional)

  • 1/4 small red onion, finely chopped

  • Juice from 1 lemon

  • 1 Tbsp olive oil

  • Salt to taste

  1. Combine and enjoy!
